• Apples

• 4 1/2 C white or brown sugar

• 1 Tbsp salt

• 1 C corn starch

• 2 tsp cinnamon

• 10 C cold water

• 3 Tbsp lemon juice

Peel apples and slice. Fill 7 quart jars with the apples. Mix sugar, salt, corn starch and cinnamon, then add to water. Heat until the mixture thickens, stirring slowly while cooking. Once thickened, add lemon juice to the mixture and pour over jarred apples. Process in a water bath for 20 minutes, or in a pressure canner just until it gets to pressure, then turn off the stove.
