Ingredients:

• 2 C plain Greek yogurt

• 1/2 large cucumber seeded, grated and salted to taste. Drain after the salt reduces moisture.

• 2 large and 1 small cloves garlic, crushed.

• Juice of 1/2 lemon

Directions:

Early in the day or the day before serving, mix yogurt, cucumber and crushed garlic. Refrigerate for several hours to let flavors blend. About an hour before serving, stir in lemon juice, and put back into refrigerator. Serve with crackers or chips.
