• 4 cans black beans, drained and rinsed

• 1 C chopped onion, divided

• 3 Tbsp lard or bacon fat, divided

• 1 tsp salt

• 1 pound chorizo or mild Italian sausage

Fry sausage/chorizo in a large skillet with half of the lard, breaking sausage into small pieces, add onions. Cook until sausage is done and onions are soft. Add one can of beans, mash lightly. Cook over high heat, gradually adding beans. When have of the beans are fired, reduce heat and add remaining beans and lard, if needed. Cook and stir until headed throughout.
