• 12 1/2 ounces water at 90 degrees

• 1/2 ounce instant yeast

• 2 ounces sugar

• 2 ounces butter, softened 

• 1 pound, 5 ounces bread flour

• 2 tsp salt

• 1 ounce dry milk solids

Mix yeast, sugar and water together. Let sit 5 minutes. Add butter. Add remaining ingredients together and mix well. Then let rise about 40 minutes. Divide the dough into portions for rolls, hamburger buns or bread, and then shape the rolls, bread, or buns into the shapes you intend to make. Let the shapes double in size, about 30 to 60 minutes. Brush rolls or bread in an egg wash and bake at 375 degrees for approximately 10 minutes.
