Ingredients:

• milk

• white vinegar

• baking soda

• salt

Directions:

Heat milk to 126 degrees. Add white vinegar slowly and stir until it separates. Let set for one hour. Squeeze out cheese by hand as tight as you can. Add soda and salt; kneed cheese until well mixed. Put pot lid and let set in a warm place. Then put in a double boiler and melt. Place in a container. Does not need a cheese press and tastes like the real thing. For two gallons of milk, add 2 tsp soda.
