Ingredients:

3 pounds sweet potatoes

1 stick butter, cubed

1 1/2 tsp. cinnamon, divided

2 C. flour

2 C. sugar

1 1/2 to 2 C. milk

Directions:

Bake sweet potatoes at 350 degrees for about 30 minutes, then cut into large chunks. Place potatoes in a pan then top with cubes of butter. Sprinkle 1 tsp. of cinnamon over the top of potatoes and butter.  Combine flour, sugar and enough milk to make a thick batter. Pour half of the batter over potatoes and give the pan a shake to settle dough. Pour reaming batter over the top, then sprinkle with remaining cinnamon and bake at 350 degrees for 30 minutes or until top is golden brown. Note: For a crisp crust, use a shallow pan. For a soft curst, use a deep pan.
