1 1/2 C Cooked or canned red beans
2 C small shell macaroni, cooked and drained
2 C frozen peas and carrots, thawed and drained
1 1/2 C sliced celery
1/4 C low-fat Italian dressing
1/4 C low-fat mayonnaise
2 Tbps chopped parsley
1/2 tsp salt
1/8 tsp pepper
Combine macaroni, beans, peas, carrots and celery. Mix in Italian dressing mayonnaise, parsley, salt and pepper. Toss with macaroni mixture and mix well. Note: This is a diabetic-friendly recipe.
