3 eggs

2 C sugar

1/2 C vegetable oil

2 C all purpose flour

2 tsp baking soda

2 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp salt

4 C diced, unpeeled apples

1 C chopped walnuts


Mix first four ingredients in a large mixing bowl. Once mixed, add next five ingredients. Fold in apples and nuts. Spread into a 9-by-13 pan and bake at 325 for 50-60 minutes. Cool in pan and frost with cream cheese frosting; store in the refrigerator.

Cream Cheese frosting


3/4 C butter, softened

2 3-ounce packages of softened cream cheese

1 tsp vanilla

3 C confectioners sugar


In a mixing bowl, combine the first three ingredients, then beat until smooth. Gradually beat in sugar.
