Ingredients:

• 1 package (14 ounce) Petit Jean Arkansas Style smoked sausage, cut into 1/4-inch slices

• 8 ounces penne pasta

• 1 1/2 jars (15 ounces) – roasted red pepper Alfredo sauce

• 2 tsp Cajun seasoning (or season to taste)

• 2 C baby spinach, torn into large pieces

• 1/2 C grated Parmesan cheese

Directions:

Prepare pasta according to package directions; drain and set aside. Sauté sausage in a large skillet over medium-high heat for 5 to 7 minutes, turning occasionally. Add Alfredo sauce and Cajun seasoning; bring to a boil. Reduce heat; simmer gently for 3 to 4 minutes. Remove from heat, stir in spinach and Parmesan cheese and stir until spinach begins to wilt. Add pasta to sauce and toss. Note: In 2018, this recipe won first place at in the Arkansas State Fair in a category sponsored by Petit Jean Meats.
