• 1 pound ground beef
• 1/2 C uncooked, instant rice
• 2 eggs, beaten
• 1 envelope (1 1/2 ounces) onion soup mix
• 1/4 C finely chopped green bell pepper
• 1 can (14 ounces) stewed tomatoes
• 1 can (12 ounces) bottled beer (any kind)
• 2 Tbsp chili powder
Mix beef, rice, eggs, soup mix and chopped pepper. Shape into six large balls, combine tomatoes, beer and chili powder in a large skillet. Heat to boiling over medium-high heat. Carefully drop meatballs into hot tomato mixture. Cover and bake in 350-degree oven for 45 to 55 minutes. Remove meatballs and thicken sauce with 3 Tbsp flour mixed with cold water.
