• 1 ball of prepared pizza dough (homemade or store bought), cut into 12, 2.5 inch circles
• 1/4 pound hot Italian ground sausage
• 2 Tbsp chopped onion
• 2 Tbsp chopped green bell pepper
• 1 clove garlic, minced
• 3/4 C canned tomato sauce
• 2 Tbsp tomato paste
• 1 tsp dried oregano
• 1 tsp dried parsley
• 1 tsp dried basil
• 1 tsp granulated sugar
• 1/2 tsp salt
• 1/4 C finely shredded mozzarella cheese
Preheat oven to 375 degrees. Lightly grease a 12-cup muffin pan. In a large hot skillet, cook the sausage, onion and green pepper until brown and no longer pink, about 10-12 minutes. Remove the sausage mixture with a slotted spoon to a bowl, leaving the grease behind. Add the garlic to the hot grease and cook for 1 minute (if there’s not enough grease, add up to 1 Tbsp oil). Add the tomato sauce, tomato paste, oregano, parsley, basil, sugar and salt. Stir until the tomato paste is smooth then bring to a boil. Taste and add additional seasoning if necessary. Remove from the heat and let cool. Place one pizza circle into the bottom of each greased muffin cup. Top each with roughly 1 Tbsp sauce. Sprinkle with cheese. Top with sausage mixture. Bake 15 minutes or until the dough is golden brown and cheese is melted. Let cool 10 minutes then serve immediately.
