• 1 C yellow corn meal

• 1 C flour

• 1/4 C sugar

• 1 1/2 tsp baking powder

• 1/2 tsp baking soda

• 3/4 tsp salt

• 1 C buttermilk

• 2 eggs

• 1/4 C melted butter

Combine all dry ingredients in a bowl. In another bowl, whisk together buttermilk, butter and eggs. Add to dry ingredients, stir until just combined. Drop large spoonfuls of the mixture into a hot skillet with oil. Flip and fry until center is done. Serve with soup or chili or enjoy with honey or jelly.
