• 3 pounds cheese (Cheddar, Colby, Monterey or Velveeta)

• 1 pound breakfast sausage

• 1 sweet onion, diced

• 3 jalapenos, cleaned and seeds removed

• 6 cloves peeled garlic

• 2 cans Rot-el

• 3 Tbsp of your favorite rub

• 2 C heavy whipping cream

Grate cheese or cube Velveeta and place into a foil pan. Brown sausage, drain fat and set aside. Stir-fry onions, garlic and jalapenos until onion becomes transparent; add to meat and combine well. Add meat mixture to cheese, add Rot-tel; mix well and top with rub. Heat smoker to 200 to 225 degrees, then smoke mixture until cheese is melted, stirring occasionally. Add heavy whipping cream and stir to make creamy.
