• 2 Tbsp bacon fat
• 1/2 C onions, small dice
• 1/4 C carrots, shredded
• 2 tbsp flour
• 1/2 C heavy cream
• 2 cups milk
• 1 tsp garlic salt
• 1/2 tsp white pepper
• 3/4 tsp Smoked Paprika
• 9 cups small diced potatoes cooked just until tender
• 2 ounces real bacon bits
• 1 tsp maple syrup
In a large bowl, mix flour, cinnamon, allspice and baking soda. In a separate bowl, cream butter, sugar and beat in eggs, applesauce and vanilla. Add mixture to dry ingredients. Using a muffin tin, fill cups three-fourth full, then bake at 350 degrees for 20 to 25 minutes.
