OFN Staff Favorite

• 8 carrots, peeled and sliced 1/4-inch thick

• 1/4 C oil

• 1/4 tsp nutmeg

• 1/2 tsp ginger

• 1/4 C brown sugar

Put carrots in a skillet and cover with oil. Stir in ginger and nutmeg. Cover and sizzle. Fry over medium heat until tender, about 15 minutes, stirring occasionally. Stir in brown sugar, continue to stir until sugar melts and carrots are glazed.
