Ingredients:

• 2 pounds ground beef

• 1 clove minced garlic

• 1 diced onion

• 2 to 3 celery stalks, diced or thinly sliced 

• 12 baby carrots, cut into small slices 

• 1 red bell pepper, diced

• 1 green bell pepper, diced

• 5 red potatoes, quartered or cut in eighths

• 1 small can of tomato paste

• 1 can (15 ounces) of diced tomatoes

• 1 can of corn

• 1 tsp fresh parsley

• 1/2 tsp dried oregano

• 1/2 tsp black pepper

• 1/4 tsp cayenne pepper

• 1 tsp salt

Directions: Add the diced onions, celery, garlic and ground beef into a big pot or Dutch oven on medium heat. Brown the meat and drain the fat. Add all other ingredients and bring to a boil. Reduce heat, cover and simmer about 30 minutes, or until carrots and potatoes are tender.
