Ingredients:

• 1 1/2 C vegetable oil

• 2 C sugar

• 3 eggs

• 2 C grated carrots

• 1 C crushed pineapple

• 2 1/4 C sifted flour

• 1 C chopped nuts

• 1 tsp baking soda 

• 1/2 tsp salt

• 1 tsp cinnamon

• 1 tsp vanilla

Directions:

Cream together oil, sugar and eggs well. Add pineapple and carrots. Mix well. Sift flour, baking soda, cinnamon and salt together. Add to creamed mixture. Add vanilla and nuts. Beat well and bake for 45 minutes at 350 degrees. Allow to cool and frost with cream cheese icing.
