Ingredients:

2 pounds Cajun style pork loin filet

2 pounds applewood smoked bacon

Cinnamon

1/2 C brown Sugar

1/2 stick salted butter

Honey

Directions:

On a baking sheet, overlap the bacon longways. Sprinkle with cinnamon. Cover with 1/2 C brown sugar. Place slices, 1/2 Tbsp, of butter throughout top of bacon. Drizzle across with honey. Set aside. In a pan with butter, sear the pork on all sides. Once seared, place pork on bacon and roll. Sit lapped side down. Lightly dust and drizzle top with brown sugar and honey. Bake at 350 degrees, covered, for 30 minutes. Then uncovered at 400 degrees until bacon is done and loin measures at 145 degrees. Baste with juices while baking. Pairs nicely with green beans.
