Ingredients:
3 C flour
2 C sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
3 eggs
1 C vegetable oil
2 tsp vanilla
2 C shredded zucchini
Topping:
3 tsp sugar
1 Tbsp cinnamon
1 C chopped pecans
Directions:
Mix all ingredients, except the topping.
Pour mixture into two greased and floured loaf pans. Bake at 350 degrees for 50 minutes. Combine topping items and sprinkle over loaves during the last 15 minutes of baking.
