• 1 1/2 C pure cane sugar

• 1/2 C dairy free milk (oat milk is a good choice)

• 1/3 C Cocoa powder (special dark is delicious) 

• 1/2 stick plant based butter

• 1/2 C peanut butter

• 1 tsp vanilla

• 3 C quick oats

Lay out parchment paper and have it ready to drop the cookie mix. In a medium pot over medium/low heat, mix the cane sugar, milk, cocoa powder and butter. Boil for 1 minute and immediately remove from heat. Add the peanut butter and vanilla and stir until combined. Add the oats and mix well. Spoon onto the parchment paper immediately as it dries quickly. Let sit to cool and set.
