FIRST LAYER – CRUST
• 1 1/2 C crushed graham crackers
• 2 Tbsp sugar
• 1 1/2 tsp cinnamon
• 4 Tbsp melted butter
Mix crust and press into dish/ or pan. Bake at 350 degrees for 10 minutes. Cool.
SECOND LAYER – FILLING
• 2 8-ounce packages, plus 3 ounces cream cheese (softened)
• 1 C sugar
• 2 tsp lemon extract
• 1 tsp vanilla
• 3 eggs
Beat cream cheese. Add sugar and beat until fluffy. Add extracts. Beat in eggs. Pour over crust and bake at 300 degrees for 60 minutes.
THIRD LAYER – TOPPING
• 1 C sour cream
• 1 Tbsp sugar
• 1 tsp vanilla
• 1 tsp cinnamon or nutmeg
• 1 can cherry pie filling
Blend topping, except pie filling, and pour over cake. Sprinkle with nutmeg. Bake 5 more minutes. Cool to room temperature, refrigerate at least 3 hours. Top with cherry pie filling.
