• 1 egg white
• 1/2 C brown sugar, firmly packed
• 1 tsp vanilla extract
• 4 C whole pecans
Preheat oven to 275 degrees. Line cookie sheet with parchment paper, then spray with cooking spray. Beat egg whites until stiff. Stir in brown sugar and vanilla, beat until smooth. Mix in pecans and stir until coated and pour onto cookie sheet. Bake until browned, about 15 minutes. Cool and store in a tin.
