Ingredients:
• 1/2 pound thick-sliced bacon, cut into 1/2-inch pieces
• 1 1/2 C sliced onions
• 6 medium potatoes, unpeeled and cut into 1/4-inch slices
• 1/4 tsp salt
• 1/4 tsp pepper, divided
• 1 1/2 C milk
• 1/4 C chopped parsley
Directions:
Cook bacon until browned. Drain and sit aside; sauté onions in bacon drippings. Remove onions. In a skillet, layer in half of the onions with half of the potatoes. Sprinkle with 1/8 tsp pepper. Layer on remaining onions, then the remaining potatoes. Pour milk over the mixture, add salt and remaining pepper. Add bacon and heat to a boil. Cover and simmer for about 25 minutes, or until potatoes are tinder. Sprinkle with parsley to garnish and serve.
