Ingredients:
1 can of salmon
3 eggs
1/3 of a package of crushed saltine crackers
2 Tbsp lemon juice
1/4 C finely diced fresh onions
Directions:
Mix all together. Make into patties – may add more (or less) crackers if needed. Heat oil in skillet over medium heat, just enough oil to cover the bottom of the pan. Cook about 6 minutes on each side until golden brown.
