• 1 chicken, boiled, drained and deboned

• 1 can of soup (cream of celery, mushroom, or chicken)

• 1 1/2 C chicken broth

• 1/2 C mayonnaise or miracle whip

• 2 boxes of frozen broccoli

• 1/2 tsp curry powder

• 1/2 C toasted bread crumbs

• 2 C minute rice, prepared according to directions

Prepare rice, steam broccoli for 6 minutes. Arrange broccoli in a large casserole dish. Add chicken chunks in a layer followed by a layer of rice. Combine soup, broth, mayonnaise and curry powder. Pour mixture over top layer. Sprinkle toasted bred over top and lightly dust with paprika. Bake at 350 degrees for approximately 30 minutes until lightly browned.
