• 3 C white chocolate chips
• 14 ounce can sweetened condensed milk
• 1 tsp vanilla extract
• 1/2 C chopped maraschino cherries, drained and patted dry
• 1/4 C chopped pistachios or almonds, optional
Line an 8×8 baking dish with parchment paper and leave overhang for easy removal. In a medium saucepan, combine the white chocolate chips and the sweetened condensed milk. Melt over low heat, stirring continuously until smooth. Remove from heat and stir in the vanilla extract. Gently fold in the chopped cherries and nuts (if desired) mixing well to ensure they are evenly distributed. Pour the mixture into the prepared pan, spread evenly and refrigerate for at least 2 hours or until fully set. Lift the fudge out of the pan using the parchment paper and cut into small squares.
