2-3 cups of cooked shredded chicken, set aside.

Sauté in a large skillet:

• Olive oil

• 1 medium chopped onion

• 1-2 cloves of crushed fresh garlic

• 1 can of crushed Italian style tomatoes

Add: 

• Cooked chicken

• Italian seasoning to taste

• Small container of heavy whipping cream

• Fresh Parmesan cheese to taste

• Bag of fresh baby spinach

• Fresh sliced mushrooms (if desired)

Cover with a lid and simmer while preparing pasta.

Cook penne pasta (or any type) according to directions, drain and add to chicken mixture while hot. Top with additional parmesan cheese before serving.
