• 1/2 C sugar
• 1/2 C brown sugar
• 1/2 C vegetable oil
• 2 eggs
• 1 3/4 C flour
• 1 tsp baking soda
• 1/2 tsp cinnamon
• 1/2 tsp nutmeg
• 1/4 tsp salt
• 1/3 C water
• 1 tsp butter cinnamon extract or 1 tsp vanilla
• 1 C pureed (finally mashed) sweet potato
• 1/2 C chopped pecans
• 350 degree oven, grease loaf pan(s)
Combine flour, baking soda, cinnamon, nutmeg and salt in a small bowl, set aside. Cream together sugars and oil, add eggs and beat well. Stir flour mixture into creamed mixture alternately with water. Add cinnamon butter extract, sweet potatoes and chopped pecans. Pour into one prepared loaf pan or 4 mini loaf pans. Bake large pan 50-60 minutes, small pans 30-35 minutes at 350 degrees. Remove from oven, let stand for 10 minutes on cooling rack and remove from pans.
