• 2 C hot, but not boiling, water
• 3/4 C sugar
• 1/2 to 3/4 C shortening (I use butter flavored Crisco)
• 2 packages yeast
• 1/2 C warm water
• 2 eggs
• 2 tsp salt
• About 8 cups flour
Combine 1 1/2 C hot water, shortening and sugar. Let shortening melt. In small bowl, combine yeast and 1/2 cup warm water and part of the sugar. To the shortening mixture, add eggs, add the yeast mixture and beat. Let rise for a bit. Add salt, and flour, one cup at a time, beating mixture after each cup is added. It is often necessary to knead the last cup of flour. Add enough flour that dough is not sticky. May need to add as kneaded. This is the time to work in flour, don’t add any later. Place in greased bowl and cover. Let rise. Punch down. Let rise again, then shape into rolls about the size of large walnuts. Let rise until desired height. Bake in 350 oven about 30 min. the dough can be put in the refrigerator and used as desired, or baked all at once.
