OFN Staff Favorite 

• 4 eggs

• 1 C vegetable oil

• 2 C pureed pumpkin (15-ounce can)

• 3 1/3 C all-purpose flour

• 1 tsp cinnamon

• 2 tsp baking soda

• 3 C granulated sugar

• 2/3 C water

• 1 tsp nutmeg

• 1 1/2 tsp salt

With an electric mixer, beat eggs and gradually add sugar. Beat well, add oil, water and pumpkin, beating well after each addition. Add dry ingredients and mix well. Pour into two large, well-greased loaf pans. Bake at 350 degrees for one hour. Note: Chopped nuts may be added if desired.
