• 2 C softened butter 

• 2 C sugar 

• 6 eggs

• 1 1/2 Tbsp vanilla 

• 1 Tbsp lemon juice 

• 3 C flour 

• 2 tsp baking powder 

• 1/4 tsp salt 

• 4 C chopped pecans 

• 2 C raisins (presoak in hot water) 

• 1 12-ounce jar of Maraschino cherries (chopped and drained) 

Preheat over 300 to 325 degrees. Cream together butter and sugar until fluffy then add: eggs, beat well. Stir in vanilla and lemon juice. Fold in flour, baking powder, salt, pecans, raisins and maraschino cherries. Pour into 8 1/2-by- 4 1/2 loaf pans and bake about 1 hour and 30 minutes, or until toothpick comes out clean.
