• 1 lemon, scrubbed, plus slices for serving
• 4 C apple cider
• 1 cinnamon stick
• 8 whole cloves
• 2 inches fresh ginger, peeled and thinly sliced
Peel lemon using a vegetable peeler to create strips, avoiding the white pith. Squeeze 2 Tbsp lemon juice, set aside. In a medium pot, combine cider, cloves, ginger, cinnamon stick and lemon zest. Bring to a boil over high heat. Reduce to low and simmer. Cover and cook 10 minutes. Add lemon juice, then strain. Discard any solids. Serve warm with lemon slices.
