• 1 C sliced almonds

• 3 C honey-flavored cornflakes

• 1/2 tsp ground cinnamon

• 1/2 tsp ground nutmeg

• 1/4 tsp sale

• 2 large eggs 

• 3/4 C milk

• 1 Tbsp pure maple syrup

• 1 tsp vanilla

• Non-stick spray

• 4 thick slices of bread, sliced crosswise to make five fingers each.

Process almonds in a food processor until coarsely ground. Add cornflakes and spices. Pulse until cornflakes are the texture of oats. Transfer into a shallow bowl. Whisk eggs, milk, maple syrup and vanilla until combined. Spray a large skillet with cooking spray. Dip bread fingers into egg mixture until completely moistened. Then roll in cornflake mixture. Place in a pan and cook over medium low heat to brown.
