• 2 1/2 C all-purpose flour

• 1/3 C unsweetened cocoa powder

• 1 tsp baking soda 

• 3/4 tsp salt 

• 1 3/4 C sugar 

• 1/2 C vegetable oil

• 3 large eggs 

• 1 1/2 C mashed ripe bananas 

• 1 C mini chocolate chips

Preheat oven to 325 degrees. Generously grease, and dust with cocoa powder, six mini loaf pans and three 6-by-3-by-2-inch foil loaf pans. In medium bowl, stir together flour, unsweetened cocoa, baking soda and salt; set aside. In a large mixer bowl at medium speed beat sugar, oil and eggs until blended. Add bananas and beat until well blended. At low speed, beat in flour mixture until just blended. Stir in chocolate chips. Fill six mini loaf pans two-thirds full and foil pans half full. Place on baking sheet. Bake 25 to 30 minutes until a toothpick inserted in the center comes out clean.
