Ingredients:
• 1 1/4 C plus 2 Tbsp sugar, divided
• 1 1/2 C cooked, mashed sweet potatoes
• 1/2 C butter, room temperature
• 3 large eggs
• 1 1/2 C all-purpose flour
• 2 tsp baking powder
• 1 Tbsp, plus 1/4 tsp cinnamon, divided
• 1 C milk
• 1/2 C raisins
• 1/4 C chopped walnuts
Directions:
Preheat oven to 400 degrees. Lightly grease two loaf pans and sit aside. In a small bowl, combine 2 Tbsp sugar and 1/4 tsp cinnamon; sit aside. In a large bowl, beat together the remaining sugar, sweet potatoes and butter until blended. Beat in eggs. In another large bowl, combine flour, baking powder and remaining cinnamon. Stir with a fork to blend. Stir flour mixture into sweet potato mixture, blend in milk. Add raisins and walnuts, stirring until blended (do not over mix). Divide batter between the two loaf pans. Sprinkle cinnamon and sugar mixture over the tops. Bake for 25 to 30 minutes.
