OFN Staff Favorite

Ingredients:

• 1 C finely chopped onion

• 2/3 C cherry preserves

• 1/4 C tomato paste

• 1/4 C cider vinegar

• 1 tsp ground chipotle chile pepper

• 2 pounds cook, smoked polish sausage or smoked turkey sausage cut into 1/2-inch pieces

Directions:

In a slow cooker, combine onion, preserves, tomato paste, vinegar and chipotle chile pepper. Add sausage, toss to coat. Cover and cook on low for 4 hours, stirring occasionally.
