Ingredients:

1 C. shortening

2 C. sugar

5 eggs

2 C. flour

1/4 tsp. salt

2 C. coconut

1 tsp. coconut extract

1 1/2 tsp. baking powder

1 C. milk mixed with  1 Tbsp. lemon juice,  or 1 C. buttermilk

Directions:

Cream sugar and shortening together; add eggs, one at a time, beating for 2 minutes after each egg is added. Add coconut extract. Combine dry ingredients. Add dry ingredients a little at a time, alternating with the milk. Stir in coconut. Bake in a greased tub pan at 350 degrees for one hour.

Glaze

Ingredients:

1/2 C. water

1 C. sugar

1 tsp. coconut extract

Directions:

Combine in a saucepan and boil for one minute. Pour over the warm cake.
