Ingredients:
1 C. chopped onion
1 C. chopped celery
2 Tbsp. butter
2 C. chicken broth (can use low sodium)
2 Tbsp. soy sauce
2 C. cooked rice
4 C. cooked and chopped chicken breast
Chinese noodles
2 C. cashews
Thinly sliced green onions (to taste)
Directions:
Sauté onion and celery in butter, then add remaining ingredients and place in a large casserole dish that has been lightly sprayed with cooking oil. Top with Chinese noodles and cashews. Bake at 350 degrees until bubbly. Top with desired amount of green onions.
