Pie Filling Ingredients:

2 C cut rhubarb

1 C sugar

1 egg, beaten

2 Tbps flour

1/2 tsp vanilla

Pie Filling Directions:

Mix all ingredients well and pour into an unbaked pie shell.

Crumble Mixture Ingredients:

3/4 C flour

1/2 C brown sugar

1/3 C butter

Crumble Mixture Directions:

Mix together to form a crumble mixture. Sprinkle over the top of the rhubarb pie.

Directions:

Bake crumble covered pie at 425 degrees for 30 to 40 minutes, or until the mixture is set and top is browned.
