• 1 C all-purpose flour

• 1 C whole wheat flour

3/4 C sugar, plus additional for tops of muffins

• 1 Tbsp baking powder

• 1/2 tsp soda

• 1/2 tsp cinnamon

• 1 C blueberries

• 1/2 C butter, melted

• 1/2 C milk

• 2 eggs

• 1/2 tsp vanilla


Heat oven to 425 degrees. Grease muffin cups, or use muffin papers. Combine dry ingredients in bowl. In a small bowl, toss 1 tablespoon of the dry ingredients with berries and set aside. After butter has cooled slightly, add it along with milk, eggs and vanilla to dry mixture. Mix until just combined. Gently fold in blueberries. Spoon batter into muffin cups, filling two-thirds full. Sprinkle tops with sugar. Bake 20 minutes.
