2 C softened butter

2 C sugar

6 eggs

1 1/2 Tbsp Vanilla

1 Tbsp lemon juice

3 C flour

2 tsp baking powder

1/4 tsp salt

4 C chopped pecans

2 C raisins (presoak in hot water)

1 12-ounce jar of Maraschino cherries (chopped and drained)


Preheat oven to 300 to 325 degrees. Cream together butter and sugar until fluffy then add eggs, beat well. Stir in vanilla and lemon juice. Fold in flour, baking powder, salt, pecans, raisins and maraschino cherries.  Pour into loaf pans and bake about 1 hour and 30 minutes or until toothpick comes out clean. Can use a light glaze.
