Ingredients:
1/4 C butter or margarine
1 large onion, diced
2 large potatoes, quartered
1 pound ground beef, browned
2 C chicken broth
2 C water
1 package potato soup mix
1 tsp salt
1/2 tsp pepper
2 cans tomatoes
1 can carrots, drained
Directions:
In a large pot, over medium heat, melt butter or margarine. Add onions and potatoes, cook for 5 to 10 minutes, stirring frequently. Add beef and cook for an additional 5 minutes. Add all other ingredients, stir and bring to a boil. Partially cover and cook for 15 minutes, then reduce heat to low and cook for 15 more minutes, stirring frequently, until thickened.
