INGREDIENTS:

2 eggs, beaten

1 C finely shredded potatoes

1 C finely shredded zucchini or crookneck squash

1/2 C finely chopped carrots

1/4 C finely chopped sweet red or green pepper

3 Tbsp all-purpose flour

1 tsp salt

1/2 tsp poultry seasoning

Dash ground red pepper

Few drops Worcestershire sauce

Lettuce leaves

Apple sauce or sour cream for topping

DIRECTIONS:

Mix together all ingredients, except toppings. Spoon a 1/4 cup of the mixture onto a hot, oiled griddle; flatten with a spatula to a 1/4-inch thickness. Repeat with remaining mixture. Cook over medium heat for 3 minutes, per side, or until golden. Once cooked, arrange on a lettuce-lined platter, served with desired topper.
