INGREDIENTS:
16 ounces canned pumpkin
2 C sugar
1 C oil
4 eggs, beaten
2 C all purpose flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
DIRECTIONS:
In a bowl, beat pumpkin, sugar and oil. Add eggs and mix well. Combine flour, soda, salt and cinnamon, add mixture to pumpkin and beat until well blended. Pour into a greases 15-by-10 baking pan and bake for 30 minutes at 350 degrees.
Cream Cheese Frosting
INGREDIENTS:
3 ounces cream cheese
5 Tbsp butter, softened
1 tsp vanilla
1 3/4 C powdered sugar
3-4 tsp milk
Chopped nuts, optional
DIRECTIONS:
Beat cream cheese, butter and vanilla in a bowl until smooth. Gradually add sugar and mix well. Add milk until the frosting is at spreading consistency. Frost cooled cake and top with nuts.
