4 cloves garlic, minced
1 C chopped onions
1/2 C olive oil
1 C freshly chopped tomato
1/4 C chopped black olives
2 Tbsp soy sauce
1 C orange juice
1/4 C brown sugar
2 Tbsp apple cider vinegar
1/4 C chopped parsley

Saute’ garlic and onions in the olive oil; add tomatoes and cook until reduced by about half. Add remaining ingredients, then simmer for about 20 minutes. Use as a marinade or grilling sauce for beef, poultry or lamb. Makes about 2 1/2 cups.
