• 2 tsp parsley flakes
• 1/2 tsp dried marjoram leaves
• 1/2 tsp dried thyme leaves
• 1/2 tsp garlic salt
• 1/4 tsp coarse ground black pepper
• 4 pork rib chops, 1/2 inch thick
• Olive oil cooking spray
Heat oven to 425 degrees, spray jelly roll pan 15x10x1 inch with cooking spray. Spray both sides of pork chops with cooking spray. Sprinkle the chops with the mixed herbs on both sides and place in the corners of the pan.
• 6 new potatoes, cut into fourths
• 4 ounces fresh mushrooms, cut in half
• 1 medium green bell pepper, but into 1 inch pieces
• 1 medium onion, cut into thick wedges
• 1 medium tomato, cut into 8 wedges
Mix potatoes, mushrooms, bell pepper and onion in a large bowl. Spray vegetables with cooking spray. Sprinkle with the herb mixture and toss to coat. Spread evenly in the center of the pan. Bake uncovered 45 minutes. Turn pork and stir vegetables. Place tomato wedges over vegetables. Bake uncovered 10-15 more minutes until the pork is cooked and vegetables are tender.
