• 2 packages cream cheese, softened

• 3/4 C sugar

• 2 eggs

• 1 tsp lemon juice

• 1 tsp vanilla

Beat ingredients together until smooth. Best if all ingredients are at room temperature to start. Line 24 muffin tins with cute cupcake liners. Put a Nilla wafer in the bottom of each. Spoon beaten ingredients on top. Bake at 375 degrees for 15 to 20 minutes. Allow to cool. Top with cherry pie filling on each cake. (You could also substitute blueberry pie filling or freshly sliced strawberries). Keep in the refrigerator and serve cold.
