INGREDIENTS:
2 C sugar
1 1/2 C vegetable or coconut oil
4 eggs
2 C flour
2 tsp baking soda
1 tsp salt
3 tsp cinnamon
3 C shredded carrots
1 C chopped pecans
DIRECTIONS:
Heat oven to 325 degrees. Combine all ingredients in a large bowl. Mix until all ingredients are incorporated. Pour into a 9-by-13 pan. Bake for 45 minutes.
Icing
INGREDIENTS:
1/2 C butter (do not use margarine), softened
8 ounces cream cheese, softened
3 1/2 C powdered sugar, sifted
DIRECTIONS:
Beat cream cheese and putter together, slowly. Beat in powdered sugar. If icing is too thick, add milk by the tablespoon until desired consistency is reached. Spread over cooled cake.
