INGREDIENTS:
2 C all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 C butter
1 C packed brown sugar
1 C granulated sugar
2 eggs
1 tsp vanilla
2 C quick-cooking rolled oats
1 C cornflakes
1 C flaked coconut
1 C chopped walnuts or pecans
DIRECTIONS:
In a small mixing bowl, combine flour, baking powder, baking soda and salt. Stir well and put aside. In a larger mixing bowl, beat butter for 30 seconds, add brown sugar and granulated sugar; beat until fluffy. Beat in eggs and vanilla. Add flour mixture and beat until combined well. Stir in oats, cornflakes, coconut and nuts. The dough will be stiff. Roll into 1-inch balls and place on an ungreased cookie sheet; flatten slightly. Bake at 375 degrees for 8 to 10 minutes, or until done.
