• 1 C cornmeal

• 1/2 tsp salt

• 2 eggs

• 2/3 C buttermilk

• 1/2 tsp baking soda

• 1/3 C shortening

• 1 small can of creamed corn

• 1 small can of chopped green chilis

• 1 C sharp cheddar cheese, grated

Mix cornmeal, salt, eggs, buttermilk, baking soda, shortening and creamed corn in a mixing bowl. Pour half of the mixture into a hot cast iron skillet. Sprinkle cheese and green chilis over the top and pour the remaining batter over the top. Bake at 375 degrees for 30-40 minutes.
